I havent seen all too many animes but the ones I do enjoy watching are. note: no particular order
Bleach Full Metal Alchemist Dokuro Chan
Card captor Sakura - I dont realy like this show but I do remember watching it with my sister when I was little. I think the plot was prety well done though so I have to give it props to that.

Cowboy Bebop, it was very original and looks like there was a lot of thought put into it. Also the English voice acting is REALLY well done. I don't really enjoy much of the newer stuff like Naruto and Bleach, but maybe I just don't like yearly anime's in general since they fit into so many stereotypes, like people jumping 80 feet into the air and shooting lasers out of their hands. Or scrawny and weak looking protagonists being far more powerful than a mass of muscle.

I've never been much into anime, but a friend of mine recommended Death Note to me a few weeks ago... I fell in love with it. Since then, I've watched the entire series, and both live-action movies. I'd like to get my hands on the manga series as well, it'd be the first I'd ever bought.

Forget what I said before, I recently watched an anime called Ga-Rei Zero.
That and Kannazuki no Miko are officially -- OFFICIALLY.. my favourite animes.
Well, for now at least.
But I love Ga-Rei Zero, so, so, so, so much.

Death Note is definetly good, Hellsing Ultimate is also quite awesome. But I would say Gantz.

Berserk - It's a classic. Hajime No Ippo - Boxing anime!? Hell even if you hate boxing I'm willing to bet this anime will still win you over. Gintama - Never fails to make me laugh, it's hilarious. Trigun - Ditto berserk. Great Teacher Onizuka - Another hilarious anime, how can an anime about a teacher be so good?
BECK deserves a mention too.

I only saw two people mention Berserk which is a shame because it's a really good anime, but I guess it's kind of old for most people. I just recently watched Tengen Toppa Gurren Lagann which is now one of my all time favorites. It wasn't really serious at all but it was really entertaining in how ridiculous every episode was increasing through the episodes. Some great characters, and the last episode is probably the most epic and mindboggling of any anime ending I've ever seen.

Funnily this is the first thread I found... hehee. I went through the last page and two people said Cowboy Bebop and that is my answer as well, hands down. There's something special about CB, there's so much emotion mixed with the series and everything in it works for me. Still one of the biggest parts is the music, it completely swept me away, I luv you Yoko Kanno.
