I just remembered Dino Crisis for the PS1. It was my first game where I actually had to manage my inventory, and keep stock of ammunition, healing items, and spawn locations of enemies. Also, I liked to mess around with combinations of items. I once accidentally created poisoned darts that I could launch from my shotgun.
